I didn’t get the recipe from Fellini’s but analyzed the ingredients to come up with my own version. This recipe serves two.
1 cup shredded romaine lettuce
1 cup shredded iceberg lettuce
1 small tomato, sliced
1/4 cup green olives
1/4 cup black olives
thin slices sweet onion (optional)
1/2 cup thin strips or shredded mozarella cheese (reduced fat)
1/4 cup Italian or vinagrette salad dressing
Add ingredients to individual bowls in order: iceberg, onion, romaine, and top each quarter with tomatoes, olives and cheese. Serve the dressing separately.
Enjoy this simple, refreshing salad that is an excellent combination with pizza.
